Ingredients
4 slices rustic bread
butter, softened
2 very ripe peaches, peeled and sliced
4-6 ounces Havarti, sliced
handful Arugula

Preparation
Brush the outsides of the bread with butter. Layer the peaches, cheese and arugula in the center and cook over medium heat in a skillet until golden brown and the cheese is melted.
